{"id":177,"date":"2021-09-25T14:07:00","date_gmt":"2021-09-25T14:07:00","guid":{"rendered":"https:\/\/foodimproviders.eu\/?p=177"},"modified":"2023-08-12T17:13:16","modified_gmt":"2023-08-12T17:13:16","slug":"eco-school-canteens-in-a-biosphere-reserve-in-galicia-short-circuits-seasonal-products-and-health","status":"publish","type":"post","link":"https:\/\/foodimproviders.eu\/es\/2021\/09\/25\/eco-school-canteens-in-a-biosphere-reserve-in-galicia-short-circuits-seasonal-products-and-health\/","title":{"rendered":"COMEDORES ESCOLARES ECOL\u00d3GICOS EN UNA RESERVA DE LA BIOSFERA EN GALICIA: CIRCUITOS CORTOS, PRODUCTOS DE TEMPORADA Y SALUD"},"content":{"rendered":"<p>Autores: Grupo de Acci\u00f3n Local \"Mari\u00f1as-Betanzos\" y Fundaci\u00f3n Juana de Vega.<\/p>\n\n\n\n<p>Ofrecer a nuestros hijos alimentos de calidad y men\u00fas equilibrados es un deber de la sociedad, y el servicio de comedor escolar puede convertirse en un espacio educativo m\u00e1s para transmitir valores como una alimentaci\u00f3n sana, basada en una producci\u00f3n y comercializaci\u00f3n respetuosas con el medio ambiente.<\/p>\n\n\n\n<p>A trav\u00e9s de la iniciativa EcoComedores, los comedores escolares situados en el <strong><em>Reserva de la Biosfera Mari\u00f1as Coru\u00f1esas e Terras do Mandeo <\/em><\/strong>(<a href=\"https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo\">https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo<\/a>) y sus alrededores, tendr\u00e1n la oportunidad de utilizar productos ecol\u00f3gicos locales (pertenecientes a la marca propia de la Reserva de la Biosfera) para preparar sus men\u00fas.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"125\" height=\"121\" src=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/biosphere.png\" alt=\"\" class=\"wp-image-178\"\/><figcaption class=\"wp-element-caption\"><strong><em>Etiqueta de Reserva de la Biosfera<\/em><\/strong><\/figcaption><\/figure>\n\n\n\n<p>La iniciativa fue promovida por el Grupo de Acci\u00f3n Local \"Mari\u00f1as - Betanzos\", gestionando el programa LEADER en colaboraci\u00f3n con el Gobierno regional, en el marco de la PAC (2014-2021) y con el apoyo de fondos FEADER.<\/p>\n\n\n\n<p>El GAL se constituy\u00f3 en julio de 2008 con el objetivo de ser el n\u00facleo de integraci\u00f3n y representaci\u00f3n de los diferentes agentes territoriales, institucionales, sociales y econ\u00f3micos, tanto p\u00fablicos como privados, interesados en promover el desarrollo del territorio de actuaci\u00f3n.<\/p>\n\n\n\n<p>La Asociaci\u00f3n tendr\u00e1 como \u00e1mbito de actuaci\u00f3n preferente los municipios de Abegondo, Aranga, Arteixo, Bergondo, Betanzos, Cambre, Carral, Cesuras, Coir\u00f3s, Curtis, Culleredo, Mi\u00f1o, Irixoa, Oleiros, Oza-Cesuras, Paderne, Sada y Sobrado.<\/p>\n\n\n\n<p>La iniciativa busca la colaboraci\u00f3n de todos los agentes implicados (alumnado, profesorado, personal de cocina, familias, productores, administraciones, empresas, etc.) para que se d\u00e9 prioridad a los alimentos locales, de temporada y ecol\u00f3gicos, mejorando as\u00ed el equilibrio nutricional del men\u00fa escolar, fomentando la econom\u00eda local, el desarrollo socioecon\u00f3mico del entorno y contribuyendo a la mitigaci\u00f3n del cambio clim\u00e1tico.<\/p>\n\n\n\n<p>En&nbsp;<a href=\"https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo\">Reserva de la Biosfera Mari\u00f1as Coru\u00f1esas e Terras do Mandeo<\/a>&nbsp;se asienta junto al Oc\u00e9ano Atl\u00e1ntico, en Galicia, ocupando 116.000 hect\u00e1reas, formadas por las cuencas hidrogr\u00e1ficas de los r\u00edos Mero y Mandeo. Con 200.000 habitantes, es una de las Reservas m\u00e1s pobladas de Espa\u00f1a. Hist\u00f3ricamente, el territorio fue el principal proveedor de alimentos de la ciudad de A Coru\u00f1a.<\/p>\n\n\n\n<p>Sin embargo, en las \u00faltimas d\u00e9cadas se han abandonado muchas tierras agr\u00edcolas, lo que ha provocado la despoblaci\u00f3n de las zonas rurales y, en consecuencia, el riesgo de incendios, la p\u00e9rdida de biodiversidad y de paisaje tradicional.&nbsp;<\/p>\n\n\n\n<p>Mari\u00f1as Coru\u00f1esas est\u00e1 creando un Sistema Alimentario Local. Promueve la agricultura ecol\u00f3gica como una oportunidad de empleo entre los j\u00f3venes. En a\u00f1os anteriores, incluy\u00f3 diferentes iniciativas:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La identificaci\u00f3n de zonas de producci\u00f3n para las personas que quieran trabajar; la creaci\u00f3n de un taller de transformaci\u00f3n de alimentos.<\/li>\n\n\n\n<li>La promoci\u00f3n de productos de temporada y locales.<\/li>\n\n\n\n<li>Creaci\u00f3n de una marca propia para los productos locales.<\/li>\n\n\n\n<li>La identificaci\u00f3n de oportunidades de empleo (producci\u00f3n de fruta, huerto).<\/li>\n\n\n\n<li>El desarrollo de circuitos de comercializaci\u00f3n.<\/li>\n\n\n\n<li>Creaci\u00f3n de ecoconsejeros en las escuelas.<\/li>\n\n\n\n<li>El fomento de la recuperaci\u00f3n de variedades tradicionales, o el uso de fauna \u00fatil en las explotaciones (cajas nido, hoteles para insectos).<\/li>\n<\/ul>\n\n\n\n<p>Desde 2014, se ha formado a m\u00e1s de 500 personas, 45% de ellas mujeres, con una tasa de creaci\u00f3n de empleo de 30%. Actualmente, 25 empresas forman parte de la marca propia de la Reserva, y se est\u00e1 trabajando para incorporar estos productos a la hosteler\u00eda local.&nbsp;<\/p>\n\n\n\n<p><a href=\"https:\/\/en.unesco.org\/mab\/strategy\/goodpractices#sdg8spainmarinascorunesas\">https:\/\/en.unesco.org\/mab\/strategy\/goodpractices#sdg8spainmarinascorunesas<\/a><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"383\" height=\"214\" src=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools.png\" alt=\"\" class=\"wp-image-179\" srcset=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools.png 383w, https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools-300x168.png 300w\" sizes=\"(max-width: 383px) 100vw, 383px\" \/><figcaption class=\"wp-element-caption\"><strong><em>Reserva de la Biosfera Mari\u00f1as Coru\u00f1esas e Terras do Mandeo<\/em><\/strong><\/figcaption><\/figure>\n\n\n\n<p><strong>Inicio y situaci\u00f3n actual del proyecto EcoComedores<\/strong><\/p>\n\n\n\n<p>En 2015, se puso en marcha un programa piloto para la introducci\u00f3n de men\u00fas ecol\u00f3gicos en las escuelas de la zona de la reserva de la biosfera.<\/p>\n\n\n\n<p>En el marco de este trabajo, fue posible ofrecer un men\u00fa ecol\u00f3gico a unos 800 alumnos de tres escuelas de la <em>Reserva de la Biosfera Mari\u00f1as Coru\u00f1esas e Terras do Mandeo<\/em> durante el curso acad\u00e9mico 2014-2015.<\/p>\n\n\n\n<p>Un total de once productores ecol\u00f3gicos locales participaron en la iniciativa. Este proyecto se convirti\u00f3 en un catalizador para el posterior suministro de productos ecol\u00f3gicos a algunas escuelas de la zona al posibilitar el contacto con las escuelas, implicar al personal de cocina, organizar las granjas y mejorar la log\u00edstica.<\/p>\n\n\n\n<p>Fruto de esta colaboraci\u00f3n entre la Reserva de la Biosfera y las explotaciones ecol\u00f3gicas, varias explotaciones certificadas comenzaron a unir sus fuerzas e intentar ofrecer un servicio com\u00fan a los colegios que confiaron en la iniciativa. As\u00ed, en 2017 se cre\u00f3 la Asociaci\u00f3n de Productores ALEGA para organizar la producci\u00f3n y sincronizarla con las necesidades de los colegios.<\/p>\n\n\n\n<p>A lo largo de 2017 y 2018 se trabaj\u00f3 en la formaci\u00f3n de productores y personal de cocina, sensibilizando progresivamente sobre los objetivos perseguidos. Se planificaron anualmente los cultivos y se organizaron los sistemas de compra y distribuci\u00f3n para alcanzar un m\u00e1ximo de 15 colegios implicados para un total de 2.600 men\u00fas servidos al inicio del curso 2019-2020.<\/p>\n\n\n\n<p>El sistema de compras ha evolucionado desde el simple contacto telef\u00f3nico inicial entre productores y escuelas hasta una hoja de c\u00e1lculo en la nube. Actualmente el proyecto est\u00e1 en proceso de definir una estructura de \"mercado\" virtual de compras. Este mercado en l\u00ednea deber\u00eda facilitar la centralizaci\u00f3n de la oferta y la demanda para mejorar el servicio a todas las partes implicadas.
