{"id":177,"date":"2021-09-25T14:07:00","date_gmt":"2021-09-25T14:07:00","guid":{"rendered":"https:\/\/foodimproviders.eu\/?p=177"},"modified":"2023-08-12T17:13:16","modified_gmt":"2023-08-12T17:13:16","slug":"eco-school-canteens-in-a-biosphere-reserve-in-galicia-short-circuits-seasonal-products-and-health","status":"publish","type":"post","link":"https:\/\/foodimproviders.eu\/fr\/2021\/09\/25\/eco-school-canteens-in-a-biosphere-reserve-in-galicia-short-circuits-seasonal-products-and-health\/","title":{"rendered":"CANTINES ECO-SCOLAIRES DANS UNE RESERVE DE BIOSPHERE EN GALICE : CIRCUITS COURTS, PRODUITS DE SAISON ET SANT\u00c9"},"content":{"rendered":"<p>Auteurs : Groupe d'action locale \"Mari\u00f1as-Betanzos\" et Fundaci\u00f3n Juana de Vega.<\/p>\n\n\n\n<p>Offrir \u00e0 nos enfants une alimentation de qualit\u00e9 et des menus \u00e9quilibr\u00e9s est un devoir de soci\u00e9t\u00e9, et le service de cantine scolaire peut devenir un autre espace \u00e9ducatif pour transmettre des valeurs telles qu'une alimentation saine, bas\u00e9e sur une production et une commercialisation respectueuses de l'environnement.<\/p>\n\n\n\n<p>Dans le cadre de l'initiative EcoComedores, les cantines scolaires situ\u00e9es dans les r\u00e9gions de l'Union europ\u00e9enne et de l'Europe du Sud-Est ont \u00e9t\u00e9 mises \u00e0 la disposition du public. <strong><em>R\u00e9serve de biosph\u00e8re Mari\u00f1as Coru\u00f1esas e Terras do Mandeo <\/em><\/strong>(<a href=\"https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo\">https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo<\/a>) et de ses environs, auront la possibilit\u00e9 d'utiliser des produits biologiques locaux (appartenant \u00e0 la marque propre de la r\u00e9serve de biosph\u00e8re) pour pr\u00e9parer leurs menus.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"125\" height=\"121\" src=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/biosphere.png\" alt=\"\" class=\"wp-image-178\"\/><figcaption class=\"wp-element-caption\"><strong><em>Label R\u00e9serve de biosph\u00e8re<\/em><\/strong><\/figcaption><\/figure>\n\n\n\n<p>L'initiative a \u00e9t\u00e9 promue par le Groupe d'action locale \"Mari\u00f1as - Betanzos\", qui g\u00e8re le programme LEADER en partenariat avec le gouvernement r\u00e9gional, dans le cadre de la PAC (2014-2021) et avec le soutien des fonds du FEADER.<\/p>\n\n\n\n<p>Le GAL a \u00e9t\u00e9 constitu\u00e9 en juillet 2008 dans le but d'\u00eatre le noyau d'int\u00e9gration et de repr\u00e9sentation des diff\u00e9rents agents territoriaux, institutionnels, sociaux et \u00e9conomiques, tant publics que priv\u00e9s, int\u00e9ress\u00e9s par la promotion du d\u00e9veloppement du territoire d'action.<\/p>\n\n\n\n<p>L'association aura comme champ d'action pr\u00e9f\u00e9rentiel les municipalit\u00e9s de Abegondo, Aranga, Arteixo, Bergondo, Betanzos, Cambre, Carral, Cesuras, Coir\u00f3s, Curtis, Culleredo, Mi\u00f1o, Irixoa, Oleiros, Oza-Cesuras, Paderne, Sada et Sobrado.<\/p>\n\n\n\n<p>L'initiative recherche la collaboration de tous les acteurs concern\u00e9s (\u00e9l\u00e8ves, enseignants, personnel de cuisine, familles, producteurs, administrations, entreprises, etc.) afin de donner la priorit\u00e9 aux aliments locaux, saisonniers et biologiques, am\u00e9liorant ainsi l'\u00e9quilibre nutritionnel du menu scolaire, favorisant l'\u00e9conomie locale, le d\u00e9veloppement socio-\u00e9conomique de l'environnement et contribuant \u00e0 l'att\u00e9nuation du changement climatique.<\/p>\n\n\n\n<p>Les&nbsp;<a href=\"https:\/\/en.unesco.org\/biosphere\/eu-na\/marinas-corunesas-terras-mandeo\">R\u00e9serve de biosph\u00e8re de Mari\u00f1as Coru\u00f1esas et Terras do Mandeo<\/a>&nbsp;Situ\u00e9e au bord de l'oc\u00e9an Atlantique, en Galice, elle occupe 116 000 hectares, form\u00e9s par les bassins hydrographiques des fleuves Mero et Mandeo. Avec 200 000 habitants, c'est l'une des r\u00e9serves les plus peupl\u00e9es d'Espagne. Historiquement, le territoire \u00e9tait la principale source d'alimentation de la ville de La Corogne.<\/p>\n\n\n\n<p>Toutefois, au cours des derni\u00e8res d\u00e9cennies, de nombreuses terres agricoles ont \u00e9t\u00e9 abandonn\u00e9es, ce qui a entra\u00een\u00e9 le d\u00e9peuplement des zones rurales et, par cons\u00e9quent, le risque d'incendies, la perte de biodiversit\u00e9 et de paysages traditionnels.&nbsp;<\/p>\n\n\n\n<p>Mari\u00f1as Coru\u00f1esas cr\u00e9e un syst\u00e8me alimentaire local. Il promeut l'agriculture biologique en tant qu'opportunit\u00e9 d'emploi pour les jeunes. Au cours des derni\u00e8res ann\u00e9es, diff\u00e9rentes initiatives ont \u00e9t\u00e9 lanc\u00e9es :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>L'identification de zones de production pour les personnes qui veulent travailler ; la cr\u00e9ation d'un atelier de transformation alimentaire.<\/li>\n\n\n\n<li>La promotion des produits saisonniers et locaux.<\/li>\n\n\n\n<li>La cr\u00e9ation d'une marque propre pour les produits locaux.<\/li>\n\n\n\n<li>L'identification des possibilit\u00e9s d'emploi (production de fruits, verger).<\/li>\n\n\n\n<li>Le d\u00e9veloppement des circuits de commercialisation.<\/li>\n\n\n\n<li>La mise en place d'\u00e9co-cantines dans les \u00e9coles.<\/li>\n\n\n\n<li>La promotion de la r\u00e9cup\u00e9ration des vari\u00e9t\u00e9s traditionnelles ou l'utilisation de la faune utile dans les exploitations agricoles (nichoirs, h\u00f4tels \u00e0 insectes).<\/li>\n<\/ul>\n\n\n\n<p>Depuis 2014, plus de 500 personnes ont \u00e9t\u00e9 form\u00e9es, dont 45% de femmes, avec un taux de cr\u00e9ation d'emplois de 30%. Actuellement, 25 entreprises sont membres de la marque propre de la R\u00e9serve, et des travaux sont en cours pour incorporer ces produits dans l'industrie h\u00f4teli\u00e8re locale.&nbsp;<\/p>\n\n\n\n<p><a href=\"https:\/\/en.unesco.org\/mab\/strategy\/goodpractices#sdg8spainmarinascorunesas\">https:\/\/en.unesco.org\/mab\/strategy\/goodpractices#sdg8spainmarinascorunesas<\/a><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"383\" height=\"214\" src=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools.png\" alt=\"\" class=\"wp-image-179\" srcset=\"https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools.png 383w, https:\/\/foodimproviders.eu\/wp-content\/uploads\/2022\/07\/eco-schools-300x168.png 300w\" sizes=\"(max-width: 383px) 100vw, 383px\" \/><figcaption class=\"wp-element-caption\"><strong><em>R\u00e9serve de biosph\u00e8re Mari\u00f1as Coru\u00f1esas e Terras do Mandeo<\/em><\/strong><\/figcaption><\/figure>\n\n\n\n<p><strong>D\u00e9marrage et situation actuelle du projet EcoComedores<\/strong><\/p>\n\n\n\n<p>En 2015, un programme pilote a \u00e9t\u00e9 lanc\u00e9 pour l'introduction de menus biologiques dans les \u00e9coles situ\u00e9es dans la zone de la r\u00e9serve de biosph\u00e8re.<\/p>\n\n\n\n<p>Dans le cadre de ce travail, il a \u00e9t\u00e9 possible d'offrir un menu bio \u00e0 environ 800 \u00e9l\u00e8ves de trois \u00e9coles de la r\u00e9gion de la <em>R\u00e9serve de biosph\u00e8re Mari\u00f1as Coru\u00f1esas e Terras do Mandeo<\/em> au cours de l'ann\u00e9e acad\u00e9mique 2014-2015.<\/p>\n\n\n\n<p>Au total, onze producteurs biologiques locaux ont particip\u00e9 \u00e0 l'initiative. Ce projet est devenu un catalyseur pour la fourniture ult\u00e9rieure de produits biologiques \u00e0 certaines \u00e9coles de la r\u00e9gion en permettant d'\u00e9tablir des contacts avec les \u00e9coles, d'impliquer le personnel de cuisine, d'organiser les fermes et d'am\u00e9liorer la logistique.<\/p>\n\n\n\n<p>Suite \u00e0 cette collaboration entre la R\u00e9serve de biosph\u00e8re et les fermes biologiques, plusieurs fermes certifi\u00e9es ont commenc\u00e9 \u00e0 s'associer et \u00e0 essayer d'offrir un service commun aux \u00e9coles qui ont fait confiance \u00e0 l'initiative. Ainsi, en 2017, l'association de producteurs ALEGA a \u00e9t\u00e9 cr\u00e9\u00e9e pour organiser la production et la synchroniser avec les besoins des \u00e9coles.<\/p>\n\n\n\n<p>Tout au long des ann\u00e9es 2017 et 2018, un travail de formation des producteurs et du personnel de cuisine a \u00e9t\u00e9 men\u00e9, sensibilisant progressivement aux objectifs poursuivis. Les cultures ont \u00e9t\u00e9 planifi\u00e9es annuellement et les syst\u00e8mes d'achat et de distribution ont \u00e9t\u00e9 organis\u00e9s pour atteindre un pic de 15 \u00e9coles impliqu\u00e9es pour un total de 2 600 menus servis \u00e0 la rentr\u00e9e 2019-2020.<\/p>\n\n\n\n<p>Le syst\u00e8me d'achat a \u00e9volu\u00e9, passant du simple contact t\u00e9l\u00e9phonique initial entre les producteurs et les \u00e9coles \u00e0 une feuille de calcul dans le nuage. Aujourd'hui, le projet est en train de d\u00e9finir une structure de \"march\u00e9\" d'achat virtuel. Cette place de march\u00e9 en ligne devrait faciliter la centralisation de l'offre et de la demande afin d'am\u00e9liorer le service pour toutes les parties concern\u00e9es.
